The Wusthof Culinar knife set looks as if it was forged from a single piece of high carbon stainless steel. This is true of the blade, bolster and a full-length tang although the handle is in fact attached separately, it too is made from stainless steel.

The shaped handle makes it ideal for any hand size. Unlike the Wusthof Grand Prix or Classic handles the Wusthof Culinar handle has a gently curved top edge which means smaller hands have an easier time of ensuring a firm grip.

They are exceptionally balanced knives due to the fact that blades and bolsters are not quite as thick as some knives.

One of the best sets it makes sense to start with when beginning your adventures in the kitchen is the Wusthof Culinar Three-Piece starter set. This set comprises of an 8 inch cook’s knife, a 6 inch sandwich knife and a 3 1/2 inch paring knife.

  • The 8 inch cooks knife is used for chopping and many mincing jobs. Wusthof offer four sizes of cooks knives, five, six, eight, and 10 inches. The 8 inch knife is the best overall knife to choose from most home kitchen tasks.
  • The 6 inch sandwich knife is a slicing utensil.
  • The 3 1/2 inch paring knife is used on fruits and vegetables.

Perhaps the one knife to add to this set would be the Wusthof 9 inch bread knife.

For those that want to buy all their knives in one hit in the Wusthof Culinar 10 piece knife Block set could be the answer. The 10th piece is made up of the maple block holding the knives; so you don’t in fact get 10 knives for your money.

The Culinar range doesn’t stop here however. The Wusthof Ultimate Culinar Knife Block Set comprises of 26 pieces and will cost you the best part of $1800. A hefty price tag. You’d pretty much want to be considering a professional career in the kitchen before you go splashing out on this set.

The Best Knife Sharpening System?

A little while ago I heard from a friend that in an emergency they have a unique way to sharpen their knives.

I thought it sounded a little crazy until I saw the video below.

What he said was take your knife out to the car. Wind down the window and use the uppermost edge of the window to sharpen the knife. Well I won’t tell you what I thought of that.

Seems like I’m going to eat humble pie.

The video shows how anyone can sharpen a knife with an item everyone has in the kitchen.

You tell me, is this the most unusual knife sharpening system you’ve seen?

The Electric Wusthof Sharpener

The Wusthof Precision Edge Diamond Electric Knife Sharpener is the most expensive model in the Wusthof sharpener range.

Does it live up to its price tag? Let’s take a look.

Firstly the down side to this electric sharpener.

As with the other sharpeners below, this one also features two slots through which you draw your knife’s blade. But with no knife guide if you don’t draw the blade through straight you end up getting an edge which won’t be symmetrical. Can this be called a fault/drawback? I don’t really think so. It doesn’t take much skill or time to line the knife up correctly. But it’s been included here for completeness.

This machine cannot be used for serrated blades. This advice comes from the horse’s mouth, Wusthof themselves. So if you have a requirement to sharpen many serrated blades then this electric version may not be for you.

So that’s the drawbacks of this Wusthof sharpener.

What’s it got going for it.

It’s very simple to use, with only two slots and an on off button.

If you’re getting a little behind in you knife sharpening regime, this machine will blast through your backlog saving you loads of time while sharpening your blades to a factory finish.

With coarse and fine grinding slots, unless your knife is chipped or damaged in some way, all that is usually required is two to three pulls through the honing slot to achieve a factory edge. Otherwise just run it a couple of times through the coarser slot to recondition the edge before honing it.

This sharpener produces a hollow ground edge not simply a straight edge. This type of edge is sharper than normal. See below this review for a description of the types of knife edges.

As mentioned above it comes with two slots for coarse and finer actions. Both use diamond wheels. The coarse wheels sharpen the blade while the finer wheels hone it.

Both wheels will remove material to a larger or lesser extent from the knife. These filings have to go somewhere and this is taken care of in the Wusthof by the use of a magnetic tray. A very nice well thought out touch.

For a solid feel on the worktop it incorporates rubber feet. To be honest you can’t afford to have this machine travelling around when using it so these were a must have item.

This model is a reasonable compact size and will not take up much room on any worksurface.

So do we recommend this Wusthof sharpener.

This sharpener produces the best edge of all the models we have reviewed. However, you have to remember that sharpening your knives should very rarely have to be done, while honing your knife could realistically be done every time you use them. So if you don’t have a large number of knves then you will only be using one half of this machine’s capabilities most of the year. With this in mind…

If you have the money then go for it, lucky you. If like most, money is a concern right now then one of the other sharpeners below could make more sense for you.

The hollow ground edge has had more metal taken away from it than the other types, which if the steel it’s made from is inferior will result in a blade that needs sharpening more often. However, because of the finer edge it is much sharper than other edge types.

The preset sharpening stones ensure the correct sharpening angle every time you use it.

The difference between this model and those already reviewed is the solid aluminium cast body which ensures robustness, the handle which matches the Ikon knife set manufactured by Wusthof and the extension on the handle which supports the sharpener when in use making it more stable. A rubber base also adds to the feeling of stability when using this sharpener.

This Wusthof sharpener can cope with straight blades, serrated or wavy blades with equal aplomb. So there’s no need for many tools to do one job.

It comes with one diamond sharpening slot and one ceramic honing slot. The ceramic honer can be used to deburr any serrated knives you have. The triangular shaped stones within the housing are ideal for sharpening all kinds of blades.

There is also a scissors or kitchen shears slot in the middle of the sharpener which can be used with either left and or right hand scissors. Wusthof have patented the floating style ceramic rod which acts as the scissors sharpener so it can accommodate many more types of scissor shapes than other models.

To care for this sharpener simply wash with clean water and dry with a cloth.

The Ikon sharpener comes with a Lifetime warranty against manufacturing defects. So if it goes wrong ten years down the line return it to Wusthof.

To use, simply pull the blade through the diamond sharpener first then onto the honer which will really make that edge bite. Never push the blade through the slots always pull. A couple of draws through each slot will usually be adequate to put a fantastic edge on your blades.

At 8 inches by 2 inches by 3.5 inches it’s not the smallest sharpener Wusthof make but it’s not overly bulky either.

All in all one of the best sharpeners Wusthof make.

The Wusthof 2-Stage Knife Sharpener

There are a number of Wusthof 2 Stage Knife Shapeners on the market. In this post we’ll take a look at two of them. The first we will look at is the 2 stage manual pull through sharpener.

The Wusthof 2-Stage Knife Sharpener is a product designed to keep your Wusthof Classic Knives in good shape. It’s for people with busy lives who don’t have a lot of time to spare. There’s no preparation with this tool, no oil or water for lubrication needed. Simply pull it out of the drawer and use it.

It is a manual sharpener that requires you to draw the blade through the sharpener, firstly through the carbide steel sharpener that removes some blade material and then through the finer ceramic sharpener that gives it the superior edge.

A quick 6 or 7 pulls though the carbide steel sharpener and then 2 or three pulls through the ceramic honer are all that’s required to keep a good edge on your knife.

As the sharpening action actually removes metal from the blade, when finshed with sharpening give the knife a wipe down with a damp cloth to remove any metal filings left on the blade itself.

This particluar version has a slot for sharpening scissor cutting edges as well.

It does the same job as its larger bretheren above but is physically quite a bit smaller. It will easily fit into a pocket or into any storage space for travelling. Take it camping any you can sharpen your knives anytime you want.

To use this red smaller version you simply have to choose if you want to sharpen or hone and then set it the right way up on a solid surface. The blade slots are clearly marked to avoid any confusion. Then it’s a matter of drawing your blades through the device.

Because of it’s size there is no scissor sharpening option.

So why do we want to use a Wusthof knife sharpener?

Before we go into why you should use a Knife Sharpener at all let’s look at some basic knife care pointers.

High end kitchen knives, chef’s knives or whatever you want to call them, are expensive pieces of equipment that need looking after if you don’t want to replace them anytime soon.

They will last a lifetime if you take care of them, and many manufacturers do indeed offer a lifetime guarantee.

So what does it take to look after your knife.

Knife Care

Most damage to a knife’s edge does not come from incorrect use but bad washing and storage practices.

How can we avoid this damage?

This means washing them carefully. Yes I know the manufacturer says they’re dishwasher proof but don’t let that fool you. A fine edge can easily be damaged by banging against other objects in there. Also the intense heat in these appliances is not doing the handles of your knives any good.

Wash them by hand with soapy water, rinse and ensure they’re dry before you put them away. The steel they’re made from these days does not rust easily but a quick wipe with a dry cloth takes seconds.

Do not keep your chef’s knives, in a drawer with the rest of your everday cutlery. They’re going to get items dropped onto them and into them over time. Also having an extremely sharp knife in an enclosed space where you frequently rush to get other objects out is a major safety issue.

The best solution is a knife block. Failing this use a hanger or a magnetic strip.

I’ve seen loads of pictures of magnetic strips where the knives are stored with the blades at the top and the handles at the bottom. DO NOT do this. The handle should always be at the top.. why?

Imagine this, if the handle was at the bottom and you reach for a knife. Then instead of grabbing it cleanly, you manage to just dislodge it. The handle falls through your grasp and the next thing through your hand which you try to catch is the blade. Ouch.

If the handle was at the top and you dislodge it, the knife simply falls; blade first, away from your hand.

Manufacturing Steel

There is a tradeoff between the steel that will make the best knives and the steel that is easier to maintain.

The best steel to use for knife manfacture will be hard and therefore will keep its edge longer. However for most of the population this type of steel will be much more difficult to resharpen at home when the edge finally becomes dull.

Sharpening the blade involves removing some material from the blade edge. If the steel is harder then this will requie more work.

In a compromise, the run of the mill manufacturers, make their knives out of softer steel. The job of sharpening them is much easier for the average indivdual to achieve.

So the more expensive knifes tend to be made of much harder steel and therefore much harder to sharpen. This has given rise to a number of sharpening solutions often provided by the manufacturers themselves.

Which Sharpener to Use

Let’s clear up the confusion between a steel which is used for honing the edge, and a sharpener.

A steel should be used every few days to hone your knives. Honing simply realigns the blade’s edge and keeps it dead straight. It lifts any area of the edge that has become slightly turned or curled over (rolled). These areas are usually too small to be seen with the eye. A few (6-8) strokes of the steel, on both sides of the blade is enough to keep the edge maintained. To add a little confusion some diamond dust or ceramic steels can in fact sharpen your knife, most however only hone.

Over time the edge that you are maintaining by honing will become duller with use. At this time sharpening of the knife is needed. Sharpening involves removing material from the blade to reconstitute the correct angle of the edge.

To put it simply sharpening your knife wears it away and so should be done sparingly. Top quality knives either need to be sent away to professional sharpeners to get this done or can be done at home when using a dedicated tool for the job.

Because different manufacturers recommend different angles for their knife’s edge it is important to match the correct knife to the correct sharpener. Only use a Wusthof Sharpener with a Wusthof knife.

Wusthof make incredibly popular ranges of kitchen knives. It was only a matter of time before they started to manufacture devices to help owners keep their knives in top condition.
