href="http://wusthofknifesharpener.org/wusthof-ikon-knife-sharpener">pull through knife sharpener</a>, it does come with instructional material and there are videos all over the internet explaining how to get the best out of it. It even ships with its own DVD.</p><p>Let&#8217;s be honest here and say you can&#8217;t get much simpler than a pull through sharpener, but the Spyderco Sharpmaker will get your edges sharper with a little effort on your part.</p><p>That&#8217;s effort to learn the system of sharpening with this product. It may look overly complicated but it&#8217;s not really.</p><p>The two smaller rails you can see in the picture are there simply for your safety in keeping the knife&#8217;s edge and your hands separated when sharpening.</p><p>The other two are the sharpening triangles. Triangles because that is their cross sectional shape.</p><p>The sharpening triangles have a small furrow formed down their length so you can also sharpen fish hooks, awls and darts in there. Or most tools with a narrow point on them.</p><p>It&#8217;s a true multi purpose sharpening tool.</p><p>The base of the Sharpmaker can be bolted to a worksurface for a really stable sharpening station. For travelling, all pieces can be easily dismantled for carrying in the self contained base of the unit. So great for camping, where a true edge on your hunting knives puts you at an obvious advantage.</p><p>The sharpening stones can be set to sharpen at either 15 or 20 degrees for knives, down to 12.5 degrees for scissors.</p><p>The only downside of this product that we could find, is that the sharpening stones can be brittle and must be handled with some care.</p><p>Cleaning the Sypderco Sharpmaker is as simple as washing with a scouring pad and leaving out to dry in the air.</p><p><a

This is compensated for by the steel the knife is manufactured from being of a higher, more hardened grade. A normal chef&#8217;s knife will have an edge angle of anywhere between 20 and 22 degrees. The Santoku knife will have a lesser angle of between 12 to 15 degrees.</p><p>The thinness of this knife leads to precision handling and a deft touch when cutting, with excellent balance thrown in for good measure.</p><p>The Wusthof Santoku incorporates a scalloped edge which reduces the probability of cut foods sticking to the knife. This is known as a Granton edge. The indentations themselves are called &#8220;Kullens&#8221;</p><p>The blade bolster and tang of this knife (basically from the tip of the blade to the end on the knife) is made from one piece of high grade steel. This gives the knife incredible strength.</p><p>The polypropylene handle like the rest of the knife is ridiculously strong and is dishwasher safe, however, as mentioned elsewhere on this site, do not out a knife of any quality in a dishwasher, if you want it to keep its edge.</p><p>Overall the Wusthof Santoku Classic is one of the more popular Wusthof knifes available today. But with no knife guide if you don&#8217;t draw the blade through straight you end up getting an edge which won&#8217;t be symmetrical. Can this be called a fault/drawback over other <a
href="http://wusthofknifesharpener.org/knife-sharpeners">knife sharpeners</a>? I don&#8217;t really think so. It doesn&#8217;t take much skill or time to line the knife up correctly. But it&#8217;s been included here for completeness.</p><p>This machine cannot be used for serrated blades. This advice comes from the horse&#8217;s mouth, Wusthof themselves. So if you have a requirement to sharpen many serrated blades then this electric version may not be for you.</p><p>So that&#8217;s the drawbacks of this Wusthof sharpener.</p><p

Otherwise just run it a couple of times through the coarser slot to recondition the edge before honing it.</p><p>This sharpener produces a hollow ground edge not simply a straight edge. This type of edge is sharper than normal. See below this review for a description of the types of knife edges.</p><p>As mentioned above it comes with two slots for coarse and finer actions. Both use diamond wheels. The coarse wheels sharpen the blade while the finer wheels hone it.</p><p>Both wheels will remove material to a larger or lesser extent from the knife. These filings have to go somewhere and this is taken care of in the Wusthof by the use of a magnetic tray. A very nice well thought out touch.</p><p>For a solid feel on the worktop it incorporates rubber feet. To be honest you can&#8217;t afford to have this machine travelling around when using it so these were a must have item.</p><p>This model is a reasonable compact size and will not take up much room on any worksurface.</p><p><strong>So do we recommend this Wusthof sharpener. </strong></p><p>This sharpener produces the best edge of all the models we have reviewed. However, you have to remember that sharpening your knives should very rarely have to be done, while honing your knife could realistically be done every time you use them. So if you don&#8217;t have a large number of knves then you will only be using one half of this machine&#8217;s capabilities most of the year. With this in mind&#8230;</p><p>If you have the money then go for it, lucky you. If like most, money is a concern right now then one of the other sharpeners below could make more sense for you.</p><p

So there&#8217;s no need for many tools to do one job.</p><p>It comes with one diamond sharpening slot and one ceramic honing slot. The ceramic honer can be used to deburr any serrated knives you have.</p><p>The triangular shaped stones within the housing are ideal for sharpening all kinds of blades. A couple of draws through each slot will usually be adequate to put a fantastic edge on your blades.</p><p>At 8 inches by 2 inches by 3.5 inches it&#8217;s not the smallest sharpener Wusthof make but it&#8217;s not overly bulky either.
