There are a number of Wusthof 2 Stage Knife Shapeners on the market. In this post we’ll take a look at two of them. The first we will look at is the 2 stage manual pull through sharpener.

The Wusthof 2-Stage Knife Sharpener is a product designed to keep your Wusthof Classic Knives in good shape. It’s for people with busy lives who don’t have a lot of time to spare. There’s no preparation with this tool, no oil or water for lubrication needed. Simply pull it out of the drawer and use it.

It is a manual sharpener that requires you to draw the blade through the sharpener, firstly through the carbide steel sharpener that removes some blade material and then through the finer ceramic sharpener that gives it the superior edge.

A quick 6 or 7 pulls though the carbide steel sharpener and then 2 or three pulls through the ceramic honer are all that’s required to keep a good edge on your knife. You’ll should use the honer every time you use the knife, but it will not need the steel sharpener very often. As little as two to three times a year should be enough, unless you’re doing some heavy work with the knife on a hard surafce.

As the sharpening action actually removes metal from the blade, when finshed with sharpening give the knife a wipe down with a damp cloth to remove any metal filings left on the blade itself.

The second 2 stage pull through we will take a look at is a pocket sized version of the above manual sharpener

It does the same job as its larger bretheren above but is physically quite a bit smaller. Knife sharpeners of this size will easily fit into a pocket or into any storage space for travelling. Take it camping any you can sharpen your knives anytime you want.

To use this red smaller version you simply have to choose if you want to sharpen or hone and then set it the right way up on a solid surface. The blade slots are clearly marked to avoid any confusion. Then it’s a matter of drawing your blades through the device.

Because of it’s size there is no scissor sharpening option.
